Sea Foam Candy

Sea Foam candy is also known as Angel Food Candy or Sponge Candy. When you bite into Sea Foam candy it actually looks like a sponge. Sea Foam candy is usually sold in Coastal towns. Sea Foam candy is best when dipped in chocolate. Hope you enjoy!

Cook time: 25 Minutes
Yield: 60 Pieces of Candy

Sea Foam Candy

Ingredients

  • 1 Cup Sugar
  • 1 Cup Dark Corn Syrup
  • 1 Tbls Baking Soda
  • 1 Tbls Cider Vinegar
  • 1 1/2 Pounds Good Quality Chocolate

Cooking Directions

  1. Line a 9 x 9 inch pan with foil that overhangs a few inches on all sides
  2. Stir sugar and corn syrup in a large and deep saucepan.
  3. Bring to a boil over medium heat and cook until candy thermometer reaches 300°or hard crack stage.
  4. Watch very carefully so it doesn\'t boil over. Immediately remove from heat.
  5. Add baking soda and vinegar and stir to combine. The mixture will lighten and foam up.
  6. When it\'s well combined - quickly pour into 9 x 9 inch prepared pan and let cool completely.
  7. Once cool - peel off of foil and cut into chunks - they can be random sizes - whatever you prefer.
  8. Temper chocolate and dip your candy one piece at a time and then place on wax paper for the chocolate to set up.
  9. These can be stored in an air tight container for a month.

Because this candy foams up when putting in the baking soda – make sure your pan is a deep one so it doesn’t go over the sides of your pan. When dipping in chocolate remember to dip the candy and then let the excess run off before putting the candy on the wax paper. These candies are crunchy, chocolate and delicious – all in one.
